The success to maintain a good restaurant is never to compromise on quality. Some eating joints start off very well but when they start compromising on quality, then it's downside graph starts. If one maintains quality it's customers have to come back to it.

I went to the mall today and had it for lunch. I'm native Japanese and all I can say is that the taste is very americanized and I didn't like it much.

Your last paragraph is absolutely true, but you have to be the FIRST to come up with something. I've seen very high-class restuarants or fast food restaurants with excellent food, but they close down because they're not the first ones there and no one is giving them a chance.
